This ice cream below has 1/2 the total fat and saturated fat compared to other store-brand chunky monkey-flavored ice creams. Also, because this ice cream is fruit-based, it is higher in fiber, too, so it will keep us satisfied longer!

- 2 Bananas (Frozen)
- 1/2 cup Unsweetened almond milk
- 4 squares of Dark Chocolate (>70% cacao)
- 1 Tbsp Unsweetened Coconut
- 1 Tbsp PB2
1. Chop bananas in small slices. Place in freezer for at least 24 hours or until they are completely frozen. Tip: Great way to reuse old, browning bananas!
PB2 is basically a low-fat version of peanut butter so you can enjoy the peanut butter taste without the extra calories! Normally peanut butter has 190 calories, and a lot of saturated fat, but PB2 only has 45 calories for the same amount and 0 grams of saturated fat! It is sometimes hard to find in stores, but you can find it here on Amazon.
Using dark chocolate >70% cacao is associated with cardiovascular benefits. In general, the higher the cacao, the better the antioxidative benefits, and the lower the fat and sugar. I used 85% cacao in this recipe.
